a good meal will not be complete if there is no wine especially during winter or cold season. It can be very difficult to choose the proper bottle of wine. When hosting a social meal function, having the “right” bottle of wine is essential. The food needs to be looked at along with personal choice in these cases. Wine coupling is the concept of picking out a wine with a flavor profile that compliments the taste profile of the meals. To make the wine and meals “go well” with each other, it could be good to have the exact same characteristics between them. The other approach is to have contradicting profiles, so the wine can balance the meals, and the other way around. There is not one right approach to do wine partnering. There are several different things to consider when doing this though.

Most recipes use a pastry dough. Almost like pie crust. My Baba used a yeasted dough like you do. I can get pizza dough from my local pizzaria and will do so to use the filling left over from trying the pastry type. (Didn't like it) Also, Baba used to punch the left over dough into 4" lumpy disks and fry them, then sprinkle them with powdered sugar. We kids would gobble them up! I think she called them lepioshki. Yum!

They say that whenever you drink red wine you are getting in touch with the spirit of the Greek God Dionysus. He is the ancient Greek God of the grape harvest and the ruler of madness, ecstasy, festivals, celebrations, eating well and the theater. Aside from grapes and a big goblet of wine he was also strongly associated with Satyrs – the mythological half man, half goat creatures that were known for being overly romantic.
I have some of wine list westchester has.

Azat, came across your recipe for Horovatz - I've been obsessed with this since our Armenian nanny made it for us when we were making shashlik. Her recipe is a bit different, but she is from Baku.

Grilled eggplant
Grilled tomato
Grilled green peppers
RAW white onion
Purple Basil
Salt/Pepper

Hi Eve, I think I added light garlic once but I was not too impressed...

the butter helps caramelize the onion and its awesomeness... and dont you know butter makes everything better

Thanks for the delicious recipe, please keep the vivid photos coming.

The salad really brought back some magnificent memories. However, I've never seen anyone add butter to this dish, I can imagine that it would add some sinful goodness to the mix. Do you ever add garlic or is an overkill?
